Pumpkin Soup made in a Vitamix!

INGREDIENTS:
1/2 cup broth (chicken or vegetable)
1/8 cup coconut milk
1 cups canned pumpkin puree
1/4 cup sliced onions, sautéed
1 garlic cloves
2 teaspoons agave or honey (or add a small amount of your favorite sweetener until it tastes the way you like it!)

Optional: a pinch of nutmeg , a pinch of paprika; half a pinch of cayenne pepper if you dare! LOL

INSTRUCTIONS in a Vitamix:
Put all the ingredients (except salt and pepper) into the container.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10
Blend for 7 minutes.
After blending:
Add 2 pinches of salt and 2 pinches of pepper to taste

Serves 2

Heavenly Blueberry Ice Cream made at home in a Vitamix

INGREDIENTS:
1 frozen banana
2 cups frozen blueberries
¼ teaspoon ginger powder
2 tablespoon peanut butter
2 tablespoons coconut milk

INSTRUCTIONS in a Vitamix:
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10
Blend until smooth and creamy.

Serves 3

Perfect Guacamole made in seconds in a Vitamix

INGREDIENTS:
1 tomato, halved
½ cup fresh cilantro
½ cup chopped red onion
2 tablespoons lime juice
1 teaspoon salt
4 ripe avocados, peeled, pitted
Optional: ½ jalapeno pepper, seeded, minced; 1 clove fresh garlic

INSTRUCTIONS in a Vitamix:
Select Variable 1.
Turn machine on and slowly increase speed to Variable 3.
Blend for 20 seconds.

Pesto that tastes like a top chef made it! So darned delicious…

INGREDIENTS:
3/4 cup olive oil
1/2 cup grated Parmesan cheese
3 garlic cloves
2 cups fresh basil leaves
3 tablespoons pine nuts
Salt and pepper

INSTRUCTIONS in a Vitamix:
Place all ingredients, except salt and pepper, into the container.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 2.
Blend for 1 minute.
Add salt and ground black pepper, to taste.

Add your pesto to your pasta (or something else – bread, sweet potato, you name it!) and voila 🙂 You have a delicious meal!

Delicious Chocolate Coconut Truffles… Made in a Vitamix :-)

INGREDIENTS:
1/4 cup peanut butter
3 tablespoons cocoa
Pinch of salt
1 tablespoon coconut oil
8 dates (pitted)
¼ cup shredded coconut

INSTRUCTIONS in a Vitamix:
Place all ingredients, except the shredded coconut, into the container.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 7.
Blend for 30 seconds.
Roll the dough into one 1” balls and then roll each ball in the shredded coconut.
Freeze for at least 30 minutes.

Tasty Acai Bowl

INGREDIENTS:
2 cups frozen strawberries
2 frozen sliced bananas
4 tablespoons acai powder
1 cup almond or coconut milk
2 tablespoons peanut butter
1 tablespoon honey or agave (or choose a sweetener you love and put as much or as little of it as you like!)
Toppings: sliced bananas, strawberries, raspberries, runny honey
Optional toppings: bee pollen, runny honey, granola, coconut flakes, goji berries, chia seeds

INSTRUCTIONS in a Vitamix:
Place all ingredients except toppings into container
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10.
Blend for 1 minute.
Spoon the acai mixture into bowls and add toppings
