Makes 4 large portions:
- 2 pounds boneless, skinless chicken thighs, cut in about 1 inch chunks
- 1/2 cup sliced, seeded jalapeno peppers
- 1/2 cup sliced, seeded mild red chilies, or bell peppers
- 1/2 cup chopped green onions
- 1/2 cup roasted peanuts
- 1/4 cup chopped fresh cilantro leaves
- 4 cups cooked white rice
- For the sauce mixture:
- 2 tbsp finely grated fresh ginger
- 4 cloves finely minced garlic
- 3/4 cup light brown sugar
- 1/3 cup rice vinegar
- 1/3 cup fish sauce
- 1 tsp soy sauce
- 2 tsp hot sauce, or to taste”
